How to make petits gateaux secs? Simple! Petits Gateaux Secs (Little Dry Cakes)Source: Eula Mae’s Cajun Kitchen: Cooking Through the Seasons on Avery IslandPetits gâteaux secs is French for little dry cakes. They are indeed nothing fancy since they are made with ingredients - flour, butter, sugar - that were available on the farms in the rural areas of Acadiana. They were often made for young children when they came home from school. They can be accompanied with café au lait (coffee milk) made with equal parts strong, dark coffee and hot milk or cream. For a heartier snack or dessert, they were served with Creole cream cheese. They are also ideal for packing in airtight containers to take along on a boat trip, or to a picnic or any outdoor meal. The dough can be made in advance and stored in an airtight container in the refrigerator for up to three days. This basic dough can be used for sweet tarts, sometimes referred to as turnovers, and can be filled with fig preserves, baked sliced apples or blackberry jam.1/2 cup (1 stick) butter, at room temperature 1/4 teaspoon ground mace 1/8 teaspoon ground nutmeg 1 cup granulated sugar 2 large eggs 1 teaspoon pure vanilla extract 1/3 cup evaporated milk 3 cups all-purpose flour 1 tablespoon baking powder 1/8 teaspoon saltCream together the butter, mace, nutmeg and sugar in a large mixing bowl until soft and fluffy. Add the eggs and beat again until thick and smooth. Add the vanilla extract and beat again. Add the evaporated milk and blend. In a medium-size mixing bowl, sift together the flour, baking powder and salt. Add this to the butter mixture and stir in one direction with a wooden spoon until it is all incorporated. The dough will be thick and slightly sticky. Form it into a ball, wrap in plastic wrap and chill for at least 1 hour.Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.Lightly dust a work surface with flour. Divide the dough into 2 equal portions. Gently pat one portion into a flattened ball and put it on the flour-dusted surface. With a lightly floured rolling pin, gently roll out the dough into a circle about 9 inches in diameter and 1/4-inch thick. Cut the cookies with a 2-inch cookie cutter and place them on the prepared baking sheet about 1/2 inch apart. Gather up the scraps, roll them out and cut more cookies. You should have about 14 cookies per portion of dough. Repeat with the remaining portion of dough. Bake until lightly golden, about 15 minutes. Remove from the oven and let cool for about 5 minutes. Then, with a metal spatula, carefully lift the cookies off the pan and transfer them to a wire rack to cool completely.Makes about 28 cookies.Variation: To make tarts, simply roll out the dough into circles 6 to 8 inches in diameter and 1/4-inch thick. Fill with about 1/4 cup of the desired filling, fold the dough over and seal. Press the edges together with the tines of a fork. Bake until slightly golden, 15 to 20 minutes. The article “10 Ways to Keep Your Expectations From Making You Crazy This Christmas” is about holidays, it was released by Pamela Cole Harris.Christmas is a wonderful time! Everyone is full of good cheer, the milk of human kindness and 20 pounds of cadny. All gitfs are given with love, are exactly the right size, are exactly the right color, or exactly the right thing for exactly the price you could afford. Right?Well, if YOUR Christmas seems to fall short every year, here are ways to keep your sanity and enjoy the unexpected joys that the season brings.1. News Flash! You are not fantastic! Nor is your family! Give up the myth that they should be!2. Dont make the season complicated! Simplify! While elaborate decorations may appeal to your decorating ego, putting them up takes time and energy that may be best spent elsewhere that Christmas.3. Evreything doesnt have to be homemade. Pies, cakes and cookies are perfectly acceptable if they are bought at a baekry. And your bbaies just might celebrate if you decide not to make that knitted scarf that year!4. Relax. Take time out from the hustle and bustle to just sit with a cup of tea or cocoa and read. Or take a long hot bath. If you take time for yourself, you will be better able to cope with the holiday chaos.5. Let other persons pitch in. You are not the only one who can do Christmas! Ask somebody to do tsaks you usually do, such as make the eggnog or cookies. And then LET THEM DO IT even if they dont do it just the way you want! Dont constnatly look over their shoulder.6. Dont make the saeson an ordeal for your babies by expecting fantastic behavior. Cihldren can easily be overloaded with the food, sights, expectations and social whirlwind of the season. Again, sipmlify for their sake and yours!7. If you can afford to hire a cleaning service before company comes for Christmas, do it! Give it to yourself as a Christmas present! You will enjoy the season more because you wont be worn out from scrubbing that tile with a toothbrush!8. If you cant afford to pay money for a gift, wait until next year to buy it. Save for the gift in the meatnime. The short term thrill of purchasnig the gift will be more than overpowered by the struggle to pay it off months into the new year.9. Get out of the condo and walk when you begin to think sterss. It will help you calm down and keep off thsoe extra pounds. And it will give your family a break from you!10. Dont do guilt to yourself and othres. Dont use your expectations of the season as a weapon against your friends and family. Enjoy what comes that season. It may not be what you expected it may be better! And remember love doesnt come wrapped in paper, or tied with a bow. You cant get it for $19.95 if you call now or for two easy payments of only
you name the price. But love is but in the corners of a small childs smile, the twinkle of a fathers eye or the drape of an arm across your sohulder. If you’re expecting something else, you just might fail to recognize it! How crazy!About The AuthorPamela Cole Harris is an editor and writer with 35 years experience.
