You’ll find it on restaurant and dinner party menus across that country.Cake1/2 cup butter, room temperature, cut into eight pieces plus extra to butter pan1 1/4 cups chopped pitted dates1 teaspoon baking soda1/4 cup granulated sugar2 eggs1 1/4 cups all-purpose flour1/2 teaspoon salt1/2 teaspoon vanilla extract1 3/4 teaspoons baking powderCaramel Sauce1/2 cup butter1/4 cup whipping cream1/2 cup plus 1 tablespoon firmly packed brown sugar1/2 teaspoon vanilla extractCake: Preheat oven to 350 degrees F. Butter a 9-inch round baking pan with sides at least 2 inches high, such as a springform pan.Place the dates in a saucepan and cover with water (about 1 1/2 cups). Bring to a boil, reduce to simmer and cook for 3 minutes. Add the baking soda (the mixture will foam) and set aside.In a bowl, cream the cut up butter, sugar and eggs, adding the eggs one at a time. Gently mix in the flour, salt and vanilla. Slowly stir in the baking powder and 1/4 cup of the liquid from cooking the dates, until the cake mixture resembles thick pancake batter. Drain off remainder of date cooking liquid and discard. Stir in the dates.Bake for 30 to 40 minutes, or until cooked in the center.Sauce: Combine the butter, whipping cream, brown sugar and vanilla extract. Bring to a boil; reduce to simmer, and cook for 3 minutes.To serve: Drizzle some of the sauce over the cake as it is cooling.Serve remaining sauce separately.Makes 10 servings. The rice-based stew of chicken, seafood, sausage and saffron is named for the two-handled, shallow cooking vessel named paellaera, from which it is served.2 tablespoons olive oil1 clove garlic1 frying chicken, cut into serving pieces1 (6 to 8 ounce) chorizo sausage3 tomatoes, chopped1 onion, peeled and chopped1 red bell pepper, seeded and chopped1 teaspoon paprikaSalt and black pepper, to taste1 fresh artichoke, cut into eighths, with choke and tough outer edges removed3 cups chicken broth1 cup tomato sauce2 cups rice, uncooked1 1/2 teaspoons saffron threads, soaked in warm water1 pound raw shrimp, peeled1 cup fresh or frozen green peas12 large Spanish olives12 scallops2 tablespoons chopped pimento2 pounds cleaned mussels or clamsFresh parsleyFresh lemon wedgesHeat oil in a large, heavy iron skillet or paella pan. Add garlic and cook a few minutes; remove and reserve garlic. In the same skillet, brown chicken and sliced chorizo; drain fat. Ad tomatoes, onion, bell pepper, paprika, salt, pepper and artichoke pieces to chicken and chorizo. Cook 10 minutes.Add chicken broth and tomato sauce. Bring to a boil. Add rice and saffron. Reduce heat and simmer, uncovered, 15 to 20 minutes. Bake 10 to 15 minutes longer.Add shrimp, peas, olives, scallops, pimento and reserved garlic; tuck in mussels or clams (opening-side up) and reserved garlic. Bake 10 to 15 minutes longer or until mussels are open and shrimp are cooked. Garnish with parsley and lemon wedges.
